What is Scotia Poking? Well, beer poking, or Bierstacheln, is a traditional German technique of plunging a red-hot metal rod into beer to caramelize residual sugars, creating a warm, sweet foam and a richer, softer flavor. This process also reduces carbonation, giving the beer a unique texture that can be described as a combination of warm foam and cold beer. It works best with malt-forward beers which is why Scotia is the perfect beer to poke!
